A Day in the Life of Jason Gibney

Jason Gibney, a 52-year-old architect and designer, has a unique way of sharing his daily routine — through the meals he enjoys. His day is filled with small but meaningful rituals that reflect his lifestyle and values.

Morning Routine

At 6:15 am, Jason starts his day with a glass of water, followed by a walk with his dog through the local cemetery. This quiet moment serves as a humbling beginning to his day, offering a peaceful start before the busyness sets in.

By 7 am, he enjoys a small bowl of goat’s yoghurt topped with blueberries, banana, and locally made granola. This breakfast is not only delicious but also packed with nutrients, including probiotics from the yoghurt and antioxidants from the berries.

Mid-Morning

At 8:15 am, Jason rides to school with his youngest son. Their journey includes a stop at Iggy’s bakery in Bronte for their “croissant Friday” ritual. Jason treats himself to a chocolate croissant and a filter coffee, while his son enjoys a different treat.

Lunchtime

At noon, Jason prepares a meal of scrambled eggs cooked in coconut oil, mixed with sorrel, parsley, parmesan, olive oil, and sauerkraut. Later in the afternoon, he enjoys chicken broth infused with lemon and parsley, providing a comforting and nourishing meal.

Afternoon Snack

By 2:30 pm, Jason has a ristretto and a couple of medjool dates. This small snack offers a boost of energy and a touch of sweetness to keep him going until dinner.

Evening Meal

At 6:30 pm, Jason enjoys a red wine, rocket salad, and homemade pizza. The pizza features cherry tomatoes on the base, with rocket, prosciutto, shaved parmesan, and extra virgin olive oil added after it comes out of the oven. This meal is both satisfying and flavorful, showcasing his love for good food.
