However, despite their success, the couple had never introduced a full-sized pizza onto their menus—until now.
Introducing Pizza’Mare
Pizza’Mare, a new venture by the Pavonis, has recently opened on the upper mezzanine level of a’Mare, one of their fine-dining restaurants. This latest addition brings a fresh take on pizza, blending traditional techniques with modern innovation. The pizzas served here are not strictly Neapolitan, nor are they entirely new-school creations. Instead, they fall somewhere in between, offering a unique experience that appeals to both purists and adventurous diners.

At the heart of Pizza’Mare’s offerings is the “biga” base—a type of pre-ferment used in Italian baking. This method results in a crust that is crisp on the outside, soft on the inside, and filled with pockets of air that create a delightful texture.
