For over a decade, the S.Pellegrino Young Chef Academy has been a beacon of opportunity for aspiring chefs around the world. This prestigious program is more than just a competition; it serves as a global platform that connects emerging culinary talents with some of the most respected figures in the industry. Through mentorship, hands-on experience, and international exposure, the program helps shape the future of gastronomy.
The competition encourages young chefs to think beyond the plate and explore the deeper meaning behind their creations. Each participant is required to submit a signature dish that reflects their technical skill, personal philosophy, and cultural identity. This process not only highlights their culinary abilities but also allows them to tell a story through their food.
“Many talented chefs can cook, but to win this kind of award, you need more than just skill,” says Dan Hong, an esteemed chef and one of this year’s judges for the Pacific Region. “You need to create a story around why you put these flavors together.”

The Journey from Application to Global Stage
Once applications are submitted, the selected dishes are sent to ALMA – the International School of Italian Culinary Arts – where they are evaluated to determine which chefs will advance to the regional finals. From there, 15 finalists will have the chance to compete at the 2027 Grand Finale in Milan, an event that offers a rare and valuable opportunity for emerging chefs to showcase their talent on a global scale.
“Because it’s an international competition, it puts you on the world stage,” explains Hong. “It’s one of the big advantages of this competition…maybe you’ll get the chance to work with these Michelin-starred chefs around the world.”
Hong is joined by a distinguished panel of judges for the Pacific Region, including:
- Analiese Gregory (Lumachelle), a pioneer in sustainable cooking
- Alanna Sapwell (Esmay), winner of Gourmet Traveller’s 2019 Best New Talent award
- James Cole Bowen (Gibney), head chef
- Clinton McIver (Amaru), internationally acclaimed chef
- Karen Martini (Bar Carolina), restaurateur
- Ross Lusted (Marmelo), leading chef
The Importance of Mentorship and Knowledge Sharing
For Hong, who attended the Grand Finale in Milan last year, the opportunity to learn from and connect with established chefs is one of the most valuable aspects of the competition—not just for the contestants, but for the broader hospitality industry.
“I think we have a responsibility to pass on our knowledge and our advice on what we’ve learned,” he says. “We shouldn’t have any secrets that stick with us to the grave—it’s our responsibility to give back to the industry.”
As he prepares for his first year as a judge, Hong emphasizes that flavor will always be the foundation of any successful dish. “At the end of the day, your food has to be delicious. If it looks amazing, if you’re using really unique techniques and you’ve got a story to back it up, then you’ve got the whole package.”
How to Apply and What to Expect
Applications for the S.Pellegrino Young Chef Academy Competition 2026–27 are open until 9 June 2026. To be eligible, applicants must be between the ages of 18 and 30 and submit their signature dish for consideration.
